Toddler friendly meals that are worth repeating in my family. My meals are mostly vegetarian, with the occassional chicken or fish recipe thrown in the mix.

I bought two eggplants the other day with no idea what I was going to do with them. I searched for some quick recipe ideas with what I had in my fridge already and eggplant "fries" was the winner!
Eggplant "Fries" 1 eggplant, peeled and cut into sticks. 1/4 cup seasoned dry bread crumbs 1/4 cup grated Parmesan cheese 2 TB olive oil
Preheat oven to 400. In a large bowl, combine Parmesan cheese and bread crumbs until mixed. Peel the eggplant, and slice into 1/2 inch sticks. Toss eggplant with olive oil. Place them in the bread crumb mixture bowl until coated and place on parchment paper on a baking sheet. Bake for 20-30 minutes until golden brown. Serve with a side of marinara for dipping, or just eat plain.
